    * 2 ounces soy crumbles, BOCA or Morningstar
    * 1/2 tablespoon minced onion
    * 1/2 tablespoon minced green bell pepper
    * 1/4 cup thinly sliced squash
    * 1/4 teaspoon dried oregano
    * salt
    * black pepper
    * 1/4 cup feta cheese, crumbled
    * 2 tbsp biscuit mix (Bisquick)
    * 1/4 cup milk
    * 2 tbsp egg substitute


Preheat oven to 400°.
Bring a skillet to medium high heat and spray with olive oil spray.
Cook crumbles, stirring occasionally, for 2-3 minutes or until the crumbles are thawed..
Add in onion, bell pepper, squash, oregano, salt, and pepper.
Lower heat to medium and stir/saute 4 minutes or until squash softens.
Transfer beef mixture to a lightly oiled baking dish.
Sprinkle feta cheese evenly over the top.
In a bowl, whisk the biscuit mix, milk, and eggs together; pour evenly over feta.
Bake for 10-20 minutes or until the pie is golden brown and firm to touch.
Let pie set for 5 minutes, then cut into wedges and serve.
