Great hot and hearty soup for winter and fall. Great hot and hearty soup for winter and fall.
Number of Servings: 24


    3 cans Minestrone soup
    1 can tomatoes w/green chilies (Rotel)
    1 can stewed chopped tomatoes
    1 can chili beans
    3 cans water
    1 1/2 to 2 lbs of lean ground beef
    1 med onion chopped or 1 cup onion chopped


Makes 24 1-cup servings
Brown ground beef with chopped onions. Drain any fat...use a really lean ground beef and you won't have to drain.
Add tomatoes w/chilis, chopped tomatoes, chili beans, minestrone soup, and 3 cans water.
Heat to just boiling, then turn down and simmer for 20 minutes or more on lower setting. Stir to prevent scorching.
This is the soup my wife hooked me with when we were dating! It's great with cornbread, or crackers. Add some shredded chees on top if you have room for the extra calories.
