Ingredients

    3 cups cold cooked wild rice
    2 cups cubed cooked chicken
    1/2 red bell pepper, diced
    1 cup 1 - inch pieces snap pea pods
    3 medium green onions, diced
    1/2 cup cashews

    Dijon Vinaigrette
    1/3 cup olive oil
    1/4 cup rice vinegar
    1 Tbsp Dijon mustard
    1/2 tsp salt
    1/4 tsp sugar
    1/4 tsp ground pepper
    2 cloves garlic, finly chopped

Directions

1. Make Dijon Vinaigretta. Toss vinaigretta and remaining ingredients except cashews until coated. Cover and refrigerate at least 2 hours to blend flavors.

2. Toss salad and cashews just before serving.
