Ingredients

    1.5 c unsweetened applesauce
    .25 c vegetable oil
    2 c whole wheat flour
    .25 c wheat germ
    .25 c splenda/sugar blend
    2 t cinnamon
    .5 t salt
    1 t baking soda
    1.33 c fresh cranberries, chopped

Directions

Preheat to 350, spray 12 muffin pan with nonstick spray and sprinkle whole wheat flour on top. Mix applesauce, oil, and egg whites in smaller bowl, set aside. In lg bowl, combine flour, sugar, soda, cinnamon, and salt. Add egg mixture and stir just until combined and moist. Fold in chopped cranberries. Fill muffin cups almost full and bake 25 minutes or til toothpick comes out clean. Cool and serve or store in airtight container. ENJOY!
