    EITHER 18 large stuffing mushrooms OR 2 packages of whole mushrooms
    1 small onion, chopped
    3 tablespoons butter
    1/4 cup dry bread crumbs
    1/4 cup finely chopped pecans
    3 tablespoons grated Parmesan cheese
    1/4 teaspoon salt
    1/4 teaspoon dried basil
    dash cayenne pepper


*Preheat oven to 400 F
1. Remove stems from mushrooms; with a melon-baller & set caps aside.
2. Finely chop stems; place in a paper towel and squeeze to remove any liquid.
3. Finely chop onion
4. In a skillet, saute chopped mushrooms and onion in EVOO for 5 minutes or until tender.
5. Remove from the heat; set aside.
6. In a small bowl, combine the bread crumbs, pecans, Parmesan cheese, salt, basil, paprika and cayenne
7. Add mushroom mixture
8. Stuff firmly into mushroom caps
9. Place in a baking pan.
10. Bake at 400 degrees F for 15-18 minutes or until tender. Serve warm.
