    3 1/2 cups unsifted flour
    3 cups sugar
    2 tsp baking soda
    1 1/2 tsp salt
    1 tsp cinnamon
    2 cups canned pumpkin
    1 cup unsweetened applesauce
    2/3 cup water
    4 eggs
    1 cup chopped walnuts
    1 10oz bag peanut butter chips


Grease and flour 3 loaf pans and preheat oven to 350 degrees.

Mix all dry ingredients, except walnuts and peanut butter chips, in a medium mixing bowl. Mix all wet ingredients in a large mixing bowl. Gradually mix the dry into the wet until thoroughly mixed. Add in walnuts and peanut butter chips and then pour into loaf pans. Bake for 50 to 60 minutes or until toothpick in center comes out clean.

Unsweetened applesauce can be substituted. It cuts the fat to 5 grams per serving.

    Anyone can easily exchange these ingredients if they choose to and adjust the calories, etc.
    I baked this recipe using mini loaf pans and have frozen them for the holidays.
