    • 3 Large Zucchini
    • 1 TSP Garlic
    • 1 cup of Kraft 2% shredded cheddar
    • 3 TBSP of Light May
    • 3 TBSP of chopped green onion


Steam zucchini, drain, add to food processor.

Add all other ingredients to a good processor.

Pulse a few times to blend it all together. You want this to look like mashed potatoes... not mushy.

Transfer to baking pan and bake at 350 for 30 minutes.

You can add crushed crackers to the top... but that will up the calories.
