Introduction

Ingredients

    2 cans Swanson Natural Goodness Chicken Broth
    3/4 cup wild rice
    1 cup long grain brown rice
    1/2 cup Smart Balance 50/50 butter blend-unsalted
    1 cup chopped onions
    2 sliced carrots
    10 bag chopped frozen broccoli, thawed
    1/4 tsp lemon pepper

Directions

Heat broth to boiling; add wild rice. Reduce heat, cover and simmer for 25 minutes. Add brown rice, cover and simmer 20 minutes more or until rice is tender. You may need to add more broth or water while simmering.
Heat butter in a nonstick skillet and cook onions and carrots til tender. Add rice mix, broccoli and lemon pepper; toss well.
Spoon into a greased casserole dish or baking pan. Cover and bake at 375° for 30 minutes. Fluff before serving.
