    2 C. zucchini (green)
    2 C. zucchini (yellow) aka summer squash
    2 C. carrots
    2 C. asparagus
    1 medium onion
    3 T. extra virgin olive oil
    2 T. herbs de provence
    2 C. chicken sausage
    6 C. brown rice (or pasta if you prefer)


Cut up first 5 vegetables into long matchstick strips. Place onto a baking sheet (or two). Sprinkle oil over veggies. Bake 350 degrees for 10 minutes. Turn over. Bake another 10 minutes. While veggies are baking, start rice water and prepare as directed on packaging. Cut up chicken sausage (remove casing if prefered) into discs, and then cut the discs in half. Put in a skilled and cook until browned. Combine rice, chicken sausage, and veggies in a large bowl. Sprinkle with herbs. Mix well and serve. Enjoy!
