Number of Servings: 8

Ingredients

1 1/2 cups quinoa, rinsed in cold water 3 times
    6 cups water
    1 1/2 teaspoons kosher salt
1/2 cup scallion greens, washed and sliced into thin rounds
1/2 bunch flat-leaf parsley, washed and roughly chopped
Seeds from 1 pomegranate (about 1 cup)
1/2 cup toasted sliced or slivered almonds (optional)
1 tablespoon extra virgin olive oil
    1 teaspoon red wine vinegar
    1 teaspoon granulated sugar
Kosher salt and ground black pepper to taste

Directions

In a large pot, add the 1/2 salt to the 6 cups of water, and bring to a boil. Add the quinoa, and cook until tender (about 8 minutes). Using a sieve, drain well. Cool to room temperature, and set aside in refrigerator.

Mix the parsley, scallion greens, pomegranate seeds, olive oil, red wine vinegar and sugar in a bowl.

Add the quinoa, and season with salt and pepper, to taste. To serve, top with the toasted almonds.

This is a most incredible salad! This was my first time using quinoa and what a way to do it! I didn't have red wine vinegar so substituted for a Balsamic/fig vinegar. I didn't put salt & pepper (which is unusual for me) because it tasted to good without. Hubby loved it so much too. thanks! - 1/3/09

This recipe is DELICIOUS! I have been a fan of quinoa for many years, mainly for it's nutritional benefits, versatility and yummy taste. All the ingredients compliment each other wonderfully, from color, to texture, to taste. Simply WONDERFUL! PS No salt needed! - 3/19/13

I did not have these ingredients - but it gave me confidence to try different Quinoa salads - a bit of sweet (e.g some currants), a + fresh (e.g. some salad veges & herbs), + crunch (e.g. chopped nuts) + zing (e.g. lemon juice).
Mix & match based on what's you have - but not too many ingredients.

My daughter and I like to make this when she visits, but my adult son doesn't care for it. I switch the quinoa over to brown rice for him when he eats with us, they both are good! - 12/4/15

This was fantastic and I didn't even need to use the almonds. I normally cook my quinoa in vegetable broth instead of water, using just enough to be fully absorbed and not bother with straining it. I wasn't sure how it would turn out so I used half water and half broth and it was delicious. - 6/25/15

I am wondering what you do with the seeds, I like pomegranate but usually spit out the seeds, kind of like watermelon, the bitter taste of the seeds plus the crunch does not enhance the dish at all - 12/4/14

HI, can someone help me figure out pomegranates?!? I purchased my first one ever, was very excited, scooped out the seeds and tried to eat them, but they were so "hully" - like getting an oatmeal hull. Is that normal? Do I just not like pomegranates? I feel like I am missing something! - 1/19/11
