Ingredients

    1 lb boneless, skinless chicken breast, cubed
    3/4 lb mushrooms, sliced
    2 scallions, sliced
    2 Tbsp white wine
    1/4 tsp thyme
    1/4 tsp salt
    ground pepper
    1 C brown rice
    1/4 C craisins
    2 C chicken stock

Directions

Preheat oven to 350.

In a large oven proof skillet or dutch oven, brown chicken. Transfer chicken to a plate.

Add mushrooms and scallions, cook, stirring frequently, until the mushrooms give off their liquid and it reduces to a glaze. Add wine and simmer until browned bits loosen from the bottom of the pan. Add thyme, salt and pepper.

Stir in rice, craisins, chicken stock and browned chicken. Bring to a simmer.

Place skillet it oven and bake until rise is tender, about 55 minutes.
