In this version of mashed potatoes, we bake first rather than boil - perfect when you're already using the oven for an accompanying roast. Ingredients

    4 medium red potatoes, scrubbed (600 grams)
    1/2 cup plain fat-free yogurt, at room temperature
    2 tablespoons chopped fresh parsley
    3/4 teaspoon finely chopped fresh rosemary
    1/2 teaspoon salt
    1/4 teaspoon freshly ground pepper

Directions

1) Preheat the oven to 400 degrees. Pierce the potatoes in several places with a fork; bake until tender, about 1 hour. Let cool slightly.

2) Peel and halve the potatoes lengthwise; discard the skins and coarsley chop the pulp. In a medium bowl, combine the potatoes, yogurt, parsley, rosemary, salt, and pepper, mashing and whipping with a potato masher or spoon until smooth.
