Introduction

Ingredients

    1/2 cup butter
    3/4 cup sugar
    2 large eggs
    1 1/2 cup four
    1/4 tsp salt
    1 tsp baking powder
    1/2 cup 2% milk
    zest of 1 lemon
    1/2 cup chopped pecans (optional)
    Juice of 1 lemon
    1/4 cup sugar

Directions

In bowl, cream butter and 1st amount of sugar. BEat in eggs, one at a time till fluffy and light.
In separate bowl, combine flour, salt and baking powder. Blend dry into creamed mixture till just combined. Add milk, zest and nuts. Stir to combine.
Pour into greased loaf pan and bake in preheated 325 degree oven for 45-55 minutes or until toothpick inserted comes out clean.
While baking mix juice of 1 lemon and 2nd amount of sugar.
After baked, while still hot and in pan, poke holes in top with toothpick. Pour juice mixture over top of hot loaf.
After absorbed, remove from pan to cool on rack.
Makes 12 servings.
