Ingredients

1 thin slice lemon
20 lg shrimp, peeled and deveined
4 tsp lemon
4 tsp dijon mustard
2 1/2 tbs olive oil
1 tbs prepared horseradish
2 tsp reduced fat sour cream
1/4 tsp salt
1/8 tsp black pepper
Directions
makes 4 servings
to make the shrimp:
in a saucepan combine 1 1/2 qt water, the lemon slice and salt to taste. bring to a boil over high heat and cook for 5 minutes. add the shrimp to the lemon water and cook until they are opaque and pink, 2 to 3 minutes. drain and discard the lemon slice.
to make the sauce:
mix the lemon juice and mustard in a large bowl. gradually wisk in the oil to make a slightly thickened sauce. stir in the horseradish, sour cream, salt and pepper.
add the shrimp to the sauce and toss to coat
serve immediately or chill and then serve.
good served over brown rice, on a salad, or whole wheat pasta
