Introduction

Ingredients

    5 lbs russet or idaho potatoes
    1 cup diced celery
    4 tb diced shallots
    2 tb chopped fresh parsley
    1/4 cup fat free italian dressing
    1/2 cup reduced fat mayonaise
    1 tsp yellow mustard


Directions

Boil potatoes whole, skin on. Drain and cool. (preferably overnight in the fridge) Peel and dice potatoes into a large bowl. Add chopped vegetables and toss. Add mustard, italian dressing and mayonaise. Toss to coat. Chill for 1 hour before serving.
