    4 Yukon Gold potatoes, peeled and cut inot 1/2-inch pieces
    4large leeks (about 2 1/2 pounds), wgute abd oake-green parts only, cleaned and chopped
    1 large onion, chopped
    5 cups fat/free, low-sodium chicken broth
    1/4 teaspoon freshly ground pepper


1. combine the potatoes, leeks, onion, broth, and pepper in a large pot and bring to a boil. reduce the heat and simmer, covered, until the vegetables are tender, 22-25 minutes. Remove from the heat and let cool for 10 minutes.
2. transfer the mixture to a blender and puree, working batches, if necessary, to prevent overflow.

    It is not vegetarian if you use chicken broth. Substitute vegetable broth and it would work. - 1/28/10
