Introduction

An old family favorite. Making this meal always makes me feel like fall has finally arrived! All of the ingredients, butter and apples included, have been accounted for in the calorie count. Number of Servings: 6

Ingredients

    1 ring (1 lb) turkey kielbasa or polish sausage, sliced or diced
    1 head cabbage, thinly sliced
    1 large onion, thinly sliced
    6 apples, diced (do not peel)
    2 T of butter

Directions

Place the diced apples in a medium-sized pot. Add 2 cinnamon sticks and about 1/4 c. water. Bring to a boil and place on a back burner to simmer.

Heat a large cast iron skillet (or other heavy skillet, not nonstick) until quite hot. Add the sausage and cook until browned. Remove the sausage from the pan. Add 1 T of the butter and the onions. Cook until translucent and just barely starting to carmelize. Remove from pan.

If all of the cabbage will fit in the pan, add the remaining 1 T of butter. Add cabbage and cook until wilted. If the cabbage must be cooked in batches, divide up the butter accordingly.

Mix onions, sausage, and cabbage in a big bowl. Remove the cinnamon sticks from the apples, which should now be tender or boiled down to applesauce. Serve everything together and enjoy!
