Ingredients

    1/2 lbs Louis Rich Turkey Smoked Sausage
    1 Medium Zucchini
    fat free butter spray, pam or Promise Fat Free Margarine to sautee with
    2 T Onions chopped
    1/4 tsp Oregano
    1/2 tsp Salt
    1/2 tsp Pepper
    1 mediom Tomato, chopped
    1 box Uncle Ben's Long Grain and Wild Rice (6oz. size)

Directions

In a large non-stick skillet, sauté sausage. Prepare rice while sausage is browning. Removesausage form pan and then sauté zucchini & spices using FF spray. Cook until zucchini is crisp-tender. Return sausage to the skillet and heat all. top rice with sausage mixture and add chopped tomatoes on top of ingredients.
