Great by itself or as a meal. Great by itself or as a meal.

Ingredients

    Lentils 2 cups
    tomato sauce with tomato tidbits 2 cups
    onion chopped .5 cup
    garlic clove crushed
    oregano 1 tbsp
    bay leaf 1 tbsp crushed
    pepper black 1 tbsp
    olive oil .25 cup
    water 2 cups
    salt 1 dash

Directions

Saute onion and garlic in olive oil. In seperate pot bring lentils to boil and rinse with fresh water. Bring lentils to boil again and rinse again. Add rest of ingredients with lentils to saute'd mix and simmer for one hour or until lentils are soft. Add more water as needed to maintan soup consistancy.
Makes 6 to 8 servings for a meal or as a side dish. Warms up delicious as a leftover and can also be frozen for future meals.
