Number of Servings: 16


    2 strips cooked bacon, sliced .5"
    1 large onion, sliced thinly
    2 cups baby spinach, finely chopped
    .85 cup crimini mushrooms, finely diced
    1 shallot, finely chopped
    .75 stick butter
    2 oz pork rinds, crushed finely
    9 eggs
    2 cups whipping cream
    .5 c shredded romano
    .5 c shredded colby jack (or your favorite)
    white pepper
    garlic powder


Preheat oven to 375 F. Liberally butter a large casserole and shake the pork rinds around until coated. Sprinkle bacon evenly on bottom. Sautee onion in 3 tbsp butter on low heat for 10 min. Add mushrooms and spinach and cook another 5-7 min. When vegetables are very tender, layer the mixture evenly over the bacon. Next, in a large bowl, add the remaining ingredients and mix well. Pour mixture over the top and bake in oven for 40 min. Makes 16 servings Serve with a salad tossed in a french vinaigrette.
