    3 oz. pecan flour or pecans
    1 large navel orange
    3 large eggs
    1/2 c Whey Low
    1/2 tsp baking powder
    4 teaspoons low fat plain yogurt

    1 cup raspberries
    2 oz. brandy
    1/4 cup Whey Low


Preheat convection oven to 325F. Coat 12-muffin pan with baking spray.

Blend pecans to flour-like powder, set aside.

Peel zest from orange, cut in quarters. Remove stems & seeds. Blend with zest to smooth paste. Add eggs,Whey Low, baking powder, yogurt and blend till smooth. Add pecan flour and blend again.

Pour batter into muffin tins, fillin almost to top. Bake on top rack of oven about 15 minutes, until firm to the touch. Transfer to wire racks to cool.

Blend raspberries, brandy, 1/4 cup Whey Low until smooth.

Place 2 muffins on a plate, spoon raspberry sauce over top. Can be served with ice cream or Cool Whip.
