Number of Servings: 6


    Lentils, 1 cup
    Skim milk, 1 cup
    Cheddar or Colby Cheese, Low Fat, 1/2 cup, grated
    Olive Oil, 2 tbsp
    Broccoli, fresh, 1 bunch (remove crowns and break into florets; chop stalks finely)
    Artichokes, frozen, 1/2 package (9 oz)
    Turnips, 1 medium, cubed
    Sweet potato, 1/4 cup, cubes
    Onions, raw, 1/2 cup, chopped
    Garlic, 3 cloves, chopped
    *Imagine Organic Vegetable Broth, 4 cup
    1 t black pepper
    2 bay leaves


Heat olive oil over medium flame in large stock pot. Add onions and garlic and heat until translucent, about 3 minutes. Add broccoli stalks, sweet potato and turnip, along with half of the vegetable broth and the bay leaves. Turn heat to medium-high. Simmer about 5 minutes, then add lentils. Simmer until vegetables and lentils are tender, about 15 minutes. Remove bay leaves, then add milk and puree using a stick blender.
(If you don't have a stick blender, transfer batches to a blender to puree.) Add remaining broth, artichokes and broccoli and simmer until broccoli is tender. Add grated cheese to bowls just before serving.

Makes about six hearty 1 1/2 servings.
