Number of Servings: 4


    1 lb boneless skinless chicken breast
    14 oz crushed tomato
    1/4 cup chopped onion
    1 cup chopped carrots
    (feel free to add other veggies if you desire)
    1/2 cup chicken broth
    2 tbsp oregano
    1 tbsp oil
    1 tbsp cayenne (or to taste)


chop up onion and carrots
put 1 tbsp olive oil in pan on stove, let heat up
add onions and carrots to pan
let cook about 2-3 minutes until slightly soft
add 14 oz of crushed tomato, and spices as desired to pan
add in 1/2 cup chicken broth

once mixed, add 1 lb boneless skinless chicken breast to pan, cover with sauce
take wax paper, and cover pan, so chicken can poach.

cook approx 15 minutes, check on chicken, flip if desired, and stir sauce so it doesn't burn. put wax paper back over pan, and continue cooking till chicken is done. remove chicken, and thicken sauce to your desire.

portion is 112 g chicken and 1/2 cup sauce. best with spaghetti squash or brown rice.
