Ingredients

    Cauliflower 2 cups chopped (fresh or frozen)
    Butter 1 or 2 pats
    Low sodium chicken stock .25 cup
    Salt and pepper to taste.

Directions

Steam cauliflower in small amount of water, salt and pepper until very soft. Drain and add chicken stock and butter.

With an imergent (wand) blender, regular blender or magic bullet, puree mixture until smooth. Taste for seasoning and serve.

Thickens as it cools to become more like mashed potatoes.
Other delish add ins are chives, crushed dried chili peppers, cayenne pepper, minced onion or light cheddar cheese.
