we love this for dinner with a side salad we love this for dinner with a side salad
Number of Servings: 4

Ingredients

    4 potatoes baked
    .50 cup broccoli chopped cookied
    1/3 cup mushroom cooked
    4 tblsp bacon bits
    3 oz velveeta light cheese
    1/3 cup nonfat milk
    salt & pepper to taste

Directions

wash potatoes poke with fork and cook in microwave

while potatoes cook heat saute pan spray with cooking spray and saute mushrooms when almost cooked add broccoli and continue cooking set aside

in small sauce pan heat milk and add cheese stir until melted set aside

once potatoes are done remove from microwave and cut open carefully scoop out potatoes and place in pan with veggies combine together season with salt and pepper to taste scoop back in potatoe skins place 2 1/2s on each plate and divide cheese sauce among each potatoe 1/2 and top with 1 tblsp bacon bits

serve and enjoy
