This soup can be made with any kind of veggies that you like! This soup can be made with any kind of veggies that you like!
Number of Servings: 12


    3 Cups chicken broth (preferably low fat, low sodium if using canned)
    2 Chicken bouillon cubes
    5 medium to large potatoes peeled and sliced.
    1 can Veg-all, or favorite veggie
    1 1/2 boneless, skinless cooked chicken breast, shredded
    1 C. skim milk
    1 Tbsp. flour
    2 slices American Cheese
    1/2 C. 4 cheese Mexican blend shredded cheese


Place broth and bouillon cubes in large dutch oven over med. high heat. Boil potatoes until tender. Mash potatoes in stock until broth is slightly creamy.
In a separate bowl combine milk and flour until all of the flour has dissolved, then add to the borth mixture, whisking as you add.
Add in veggies and chicken and bring soup to a gentle boil.
Add in cheeses and stir. Soup should be creamy and thick.

Makes approx. 12 1 C. servings.
