    • 1 tbsp olive oil
    • 2 pork tenderloins
    • 1 large onion, chopped
    • 8-oz sliced mushrooms
    • 1 cup chicken broth
    • 2 tbsp Worcestershire
    • 2 tsp paprika
    • 2 tsp dijon mustard
    • sprinkle with thyme
    • dash of sea salt
    • 2 large red peppers, sliced
    • 1 cup sour cream
    • 1 tbsp Parsley
    • dash black pepper


1. Start the noodle pot of water. Slice pork into bite-size strips or pieces , chop onion and slice mushrooms.
2. Add oil to large sauté pan and set over medium-high heat.Add pork and stir-fry just until it turns colour, 5 to 7 minutes.
3. Add onions, mushrooms, broth, Worcestershire, paprika, Ddjon, thyme and salt.
4. Add the noodles to water and set timer (see directions on package). Bring to a boil, uncovered and stirring occasionally, for 5 minutes.
5. Meanwhile, slice peppers into strips. Add peppers strips and stir frequently until softened slightly, 2 minutes.
6. Remove from heat and stir in sour cream, parsley, and black pepper.
7. Serve over noodles.
