    * 1/4 cup butter
    * 1/3 cups honey
    * 1 egg
    * 1/2 tsp vanilla
    * 1 cup whole wheat flour
    * 1/2 cup oatmeal
    * 2/3 cup ground flax
    * 1/4 tsp salt
    * 1/2 tsp baking powder
    * 1/2 tsp baking soda
    * 3/4 cup chopped almonds

    For added bling, sprinkle whole flax seeds on top of the cookies before baking.

    Low Fat Version: Substitute 1:1 Appliesauce for butter (1/4 cup).

    Low Sugar Version: Substitute 1:1 Agave syrup for honey.


Preheat Oven to 350 degrees.

Cream butter an honey, then add the egg and vanilla. Mix it together thoroughly.

In another bowl, combine the dry ingredients: flour, oatmeal, flax, salt, baking powder and soda.

Stir into creamed misture. Mix until blended. (add chocolate chips and nuts if desired).

Drop by tablespoon onto ungreased cookie sheet and bake for 7-8 minutes.

Yield: 22 cookies.
