    2 cups brown rice, cooked
    1 large head cabbage
    1 cup 'crumbles' (or lean ground turkey)
    1/2 cup onion,minced
    3 cloves garlic,minced
    2 small eggs
    2 Tbsp. Olive oil
    1/2 cup reserved water from steaming cabbage
    dash pepper
    1 can tomatoes, diced
    ** optional 1 Tbsp. brown sugar added to tomatoes for sauce
    ***Optional vegetable bouillon added to water


Preheat oven to 375*.Place can of tomatoes in small pot and put on stove to simmer until the tomatoes are soft and mushy.*Add optional brown sugar if desired. Allow to simmer on low while you prep. Core cabbage,place in pot, and cover with water. Bring to boil. Lower heat to medium and cover with lid and cook until slightly softened. remove cabbage and place on a dish to cool. Meanwhile, in a large pot, saute onions and garlic in olive oil. Add crumbles, rice, and egg, and 1/2 cup of the cabbage water, and dash of black pepper. When you can handle the cabbage, peel leaves and place on work area. Divide the mixture into 6 equal parts and fill six large cabbage leaves and roll up. Place rolls with folded ends down into a 9x13 baking dish. Ladel tomatoes over the rolls. cover baking dish and bake 45 minutes or until cabbage is easily pierced with fork.

**I cut up the rest of the cabbage leaves and assemble in the cassarole dish.
***optional vegetable bouillon is added to the 1/2 reserved water
