    1 Tbsp. olive oil
    one small onion, chopped
    8 oz. diced chicken
    .5 cup chopped celery
    .5 cup chopped carrots
    8 tsp buffalo wing sauce
    4 oz. low-fat cheddar cheese
    4 oz. blue cheese
    4 whole wheat tortillas
    cooking spray


Heat frying pan over medium heat and add olive oil. Saute onions until softened Add celery and carrots and cook about 5 minutes, then add chicken and cook until done. Stir in Buffalo sauce and cook, covered, for five minutes On a cookie sheet, spread chicken mixture on tortillas followed by blue cheese then cheddar . Broil until cheese is melted.
