Ingredients

    * 1/4 cup water
    * 1/4 plus 1/8 teaspoon olive oil
    * 1/8 teaspoon salt
    * 1/8 garlic clove, minced (1/4 tsp)
    * 1 1/4 oz couscous (35g)
    * 2 tbsp tomatoes or cherry tomatoes, halved
    * 1/4 cup diced English cucumber
    * 1 tbsp chopped onion
    * 1 tbsp fresh lemon juice
    * 3/4 teaspoon chopped fresh mint
    * 1/4 teaspoon dill
    * 1/2 ounce feta cheese, crumbled

Directions

# Combine first 4 ingredients in medium saucepan; bring to a boil.
Gradually stir in couscous.
Remove from heat. Cover and let stand 5 minutes. Fluff with fork; cool.
Combine couscous, tomatoes and next 5 ingredients (thru dill) in a large bowl; toss well. Add cheese.
