Introduction

A delicious blend of veggies and chicken. This is my lunch of choice on busy days when I know I won't have time to stop for an afternoon snack. With 12g of fiber, it keeps you full for hours. Ingredients

    1 whole wheat low carb tortilla
    0.5 Roma tomato, thinly sliced
    1.5 oz grilled chicken breast strips
    2 small artichoke hearts, layers separated
    0.5 oz sweet roasted peppers (I like Dunbars)
    8 spinach leaves
    2 Tbsp garlic hummus (I like Tribe)

Directions

Spread 1 Tbsp of hummus down middle of tortilla. Layer spinach, tomato, peppers, artichoke and chicken. Top with remaining hummus and season to taste.

Makes 1 serving

For added flavor, top with feta.
