Quick and easy one pot chicken dish with lots of flavor. Quick and easy one pot chicken dish with lots of flavor.
Number of Servings: 4


    16 oz boneless, skinless Chicken, cut into 4 pieces
    1 Tbsp Olive Oil
    1 med onion, chopped
    2 cans, 15 oz Tomatoes, chopped with basil & garlic
    2 Tbsp Golden Raisins
    10 Large Black Olives cut in half
    1 Tbsp Honey
    1/2 tsp Rosemary, dried (to taste)
    1/2 Cinnamon, ground (to taste)


Saute onion in olive oil. Add Chicken Breasts brown on each side. Add tomatoes, raisins, olives, honey, rosemary and cinnamon. Heat and let simmer 30 minutes uncovered to reduce juices.
Serve with rice or over bed of fresh spinach.
