Ingredients

    1 cup all-purpose flour
    2 T. cornmeal
    1 T. sugar
    1 t. baking powder
    1/2 t. baking soda
    1/4 t. salt
    1/4 t. cinnamon
    1/4 c. egg beater
    1 c. milk
    1 T. lemon juice
    2 T. vegetable oil
    1 cup blueberries

Directions

Combine dry ingredients in a bowl. In another bowl, mix milk, lemon juice, oil and egg. Add to dry ingredients. Fold in blueberries. Pour 1/4 cup batter on hot griddle. Makes 12-14 pancakes, approximately 4 servings.
