    3/4 cup olive oil (or any oil you prefer)
    3/4 cup flour
    32 ounces chicken broth
    1 cup green pepper
    1 cup onion
    1 cup celery
    4 or 5 cloves garlic
    Tabasco to taste
    Tony Chachere's creole seasoning (about a tbsp, it is a little spicy but great) You can find this in most grocery stores. I use it on everything!
    2 cups turkey
    Smoked sausage (optional)
    2 cups brown rice


Chop the veggies, turkey and sausage.
put oil and flour in large heavy dutch oven, put on medium heat and stir until it reaches a chocolate brown. Be patient, this takes awhile, be careful not to burn, I find that when it reaches the color of peanut butter I don't have long to wait.

Add veggies and cook for about 5 more minutes, add broth, seasoning and meat, cook over medium low heat for at least an hour, it will not thicken a lot.

Serve in a soup bowl over a scoop of rice.
