Introduction

Melty veggies - so delish! Melty veggies - so delish!
Number of Servings: 4

Ingredients

    1 medium eggplant
    2 medium red and/or yellow peppers
    1 medium onion
    1 large or 3 medium zucchini
    2 medium/large tomatoes
    2 tsp olive oil
    Salt and Pepper

Directions

Slice all veggies fairly thinly (1/8 to 1/4 inch thick)
Sautee onions until soft and scatter in the bottom of a Pam sprayed roasting pan (Tian/cassarolle dish).

Mix the veggies together and scatter ontop of the onions in small layers adding salt and pepper between each layer.

Bake uncovered at 400 F for 2 hours until all liquid is evaporated and veggies are melted into eachother.

DELISH!!!!
