Number of Servings: 6


    6 boneless, skinless chicken breast halves
    1c. black cured olives
    4 cloves garlic, peeled and chopped
    1 c. cherry or grape tomatoes
    2 tablespoon olive oil
    1 lemon, juice and zest
    1/4 c. fresh basil, chopped finely
    6 tablespoons low fat feta cheese, crumbled


Heat oven to 400 degrees.

Place chicken breasts in a baking dish.
Cover chicken breasts with the cloves of garlic, chopped basil, and lemon zest.
Drizzle oil and lemon juice over chicken.
Place olives and tomatoes all around the chicken.
Bake approximately 30 minutes until the chicken is cooked through.
Serve with a sprinkle of feta on top.
Yields 6 servings.
