    1 lb. Turkey sausage OR Italian pork sausage
    8 -10 cups chicken broth (or more, if you like more broth)
    2 cups chopped fresh kale
    7-8 small RED potatoes, chopped
    1 c. chopped onion
    1/2 cup chopped or shredded carrot
    2 cups chopped fresh zucchini
    1/2 lb. Pepper Jack cheese (only if you use the turkey sausage) OR white sharp cheddar (if you have to use Italian sausage). Using Pepper Jack with Italian sausage can make the soup a bit spicy!


If you can find fresh turkey sausage, this will save you calories and it is just as good! Brown the sausage in a pan and drain. In large stock pot combine sausage with all other ingredients EXCEPT THE CHEESE. When this has simmered for an hour or more and all vegetables are good and tender, grate the pepper-jack cheese and stir by small portions into the simmering soup, stirring so that the cheese will melt and be disseminated throughout the broth. NOTE: If you have to use regular Italian sausage using PepperJack cheese may make this too spicy; when I cannot find the turkey sausage, I use 8 oz. of SHARP white cheddar cheese found at Kroger (their brand). Then you are not getting a 'double whammy' with spices in the sausage and also spices in the peppery cheese.
