    2 eggplant
    1 lb extra lean ground beef
    1 jar Barilla Green and Black Olive Tomato Sauce
    1 tbs evoo
    15 oz fat free ricotta cheese
    1 1/4 c Asiago and Parmesan Cheese Blend
    3 c shredded Part Skim Mozzarella
    1 egg yolk
    3 hard boiled eggs
    1 clove garlic
    1 tsp season all
    1 tsp italian seasoning


slice eggplant in to 1/4 inch rounds, arrange on two sheet pans and bake 15 minutes each side.
meanwhile, brown ground beef adding garlic and season all, drain and add tomato sauce.
mix ricotta cheese, 2 c. mozz. and 3/4 c. parm. blend, spinach and egg yolk along with italian seasoning.
layer sauce, eggplant, cheese mix, sliced hard boiled egg, repeat and top with rest of cheeses
bake about 30 minutes at 375
makes 8 servings but can be scaled down to serve more or bring down calories and fat
