Ingredients

    1.5 cup Smart Balance Spread for baking
    1.5 cup packed brown sugar
    .5 cup sugar
    2 eggs
    2 tsp. vanilla
    3.25 cups flour
    .25 cup ground flaxseed
    2 tsp. baking powder
    .5 tsp. baking soda
    1 tsp. cinnamon
    2 tsp.salt

Directions

Add sugar to SB spread. Beat well. Add egg and vanilla and beat together until well mixed.

Whisk all the dry ingredients except oatmeal and pecans together and add to the wet mixture. Mix well.

Add oatmeal and pecans and mix with sturdy wooden spoon until well mixed.

Use parchment paper to line cookie sheet and roll into ball the size of a walnut to get approximately 56 cookies. Flatten with fork and bake at 375 degrees for about 15 minutes. Let cool about 10 minutes and slide off parchment.
