Introduction

My mom's recipe from a tweaked version out of the Susan Powder book. My mom's recipe from a tweaked version out of the Susan Powder book.
Number of Servings: 12

Ingredients

    2 can kidney beans, rinsed
    2 c. frozen corn
    1/2 large onion, chopped
    1 red pepper, chopped
    1 green pepper, chopped
    2 stalks celery, chopped
    2 cloves garlic, minced
    1/2 c. cilantro, chopped
    2 t. olive oil
    1 t. basil, dried
    1/2 t. oregano, dried
    1 t. sugar
    1 t. salt
    12 flour tortillas
    shredded cheddar cheese (optional)

Directions

Chop everything up. Toss it in a big wok and heat it a while to meld flavors. Fill the burritos with a half cup of mix each. If you want cheese, put about one tablespoon in each and sprinkle another tablespoon on top. Put the burritos in a casserole dish and cover with tinfoil. Heat at 350 for 10-15 minutes.
