Easy to make, creamy cheesy enchiladas! Easy to make, creamy cheesy enchiladas!
Number of Servings: 10

1 lb. cooked chicken breast, shredded.
    10 corn tortillas (I use Trader Joe's)
    1 can/jar Enchilada sauce (I use Trader Joe's)
1 can 97% fat free Cream of Chicken
1 can (small) sliced black olives, divided
    1 C 2% cheddar cheese, divided

Mix the shredded chicken breast with half of the olives and half of the cheese in a bowl, set aside. In a shallow dish, pour about 1/4 cup of the enchilada sauce and set aside. In a small bowl, mix the remaining enchilada sauce with the can of Cream of Chicken. Dip each corn tortilla in the shallow dish to coat, fill with the chicken mix, and roll into a 9x13 casserole, seem side down. Repeat until you have made all 10 enchiladas. Pour the enchilada sauce mixture over all the enchiladas, spreading evenly to coat. Sprinkle with the remaining cheese and olives. Bake at 375 degrees for 20 minutes, or until bubbly.

Makes 10 enchiladas.
