This spread tastes and can be used just like butter in cooking and baking, but is lighter in saturated fat and more spreadable. Keep refrigerated to maintain solid consistency. Ingredients

    2 sticks unsalted butter
    1 cup safflower oil
    2 tablespoons nonfat dried milk
    1/4 teaspoon liquid lecithin
    2 tablespoons water
    1/2 teaspoon salt

Directions

Let the butter sit at room temperature until softened. Put all ingredients in a blender and blend until smooth. Pour into a glass or porcelain container, cover, and refrigerate until solid. Use just like butter, recipe makes about 2.5 cups or 96 one teaspoon servings.
