Introduction

Growing up I ate rice in just about anything that was soup. Here's my version of black beans with rice. I do a half and half mixture of white and brown rice in the rice cooker before adding it to the soup. Growing up I ate rice in just about anything that was soup. Here's my version of black beans with rice. I do a half and half mixture of white and brown rice in the rice cooker before adding it to the soup.

Ingredients

    14.5 oz. can of diced tomatoes
    15.5 oz. can of black beans
    1 c. sliced sweet bell peppers
    1 c. cooked brown rice
    1 c. cooked white rice

Directions

Add the tomatoes, black beans, and peppers into a large sauce pan and bring to a simmer. Season to your taste. Add cooked rice and let simmer for a few more minutes to distribute flavors.

Makes 4 1 c. servings
