    Olive Oil, 1.5 tbsp
    Onions, raw, 175-200 grams
    Carrots, raw, 285-300 grams
    Celery, raw, 150-175 grams
    Butternut Squash, 250 grams
    Cumin, 1 Tablespoon
    Garlic Powder, 1/2 Tablespoon
    Onion Powder, 1/2 Tablespoon
    Lentils, 200 grams dry
    Water, tap, 7-8 cup (8 fl oz)
    4-5 dashes hot pepper sauce (OPTIONAL)


Heat Olive Oil in a large soup pot. Add Veggies and sauté until slightly softened Add Cumin, Garlic Powder, Onion Powder, Salt and Pepper. Mix to coat vegetables and cook for another 1-2 minutes.

Add Lentils and water. Bring to a boil and then reduce to simmer for 30-45 minutes or until lentils are tender.

With either a stick blender or in your blender or food processor, Blend until desired consistency. I blended this batch until completely smooth and thick. Add additional water if too thick after blending. Makes 6 servings.
