Introduction

Using just four ingredients, these chocolate Bailey's truffles are simple to make and fun to eat. These can easily be made ahead to save on time. Roll them in cocoa or chocolate sprinkles instead of sugar, if desired. Using just four ingredients, these chocolate Bailey's truffles are simple to make and fun to eat. These can easily be made ahead to save on time. Roll them in cocoa or chocolate sprinkles instead of sugar, if desired.

Ingredients

    1 pound chocolate, chopped
    2/3 cup heavy whipping cream
    1/3 cup Bailey's Irish Cream
    Powdered sugar

Directions

1. Place chocolate in a heat proof bowl and set aside. Bring cream to a boil in small pot.

2. Pour cream over chocolate and let sit 1 minute. With a rubber spatula, begin stirring cream and chocolate together in center of the bowl. Gradually incorporate the remaining chocolate and cream for the side.

3. Stir in Irish Cream. Cover and let stand overnight or refrigerate up to 2 weeks.

4. Scoop mixture out into small round balls, about 3/4-inch in diameter. Roll the truffles, individually, in the palms of your hands to achieve a uniform shape.

5. Store truffles in refrigerator for up to 2 weeks and toss them in sugar before serving. (We also like rolling them in white chocolate shavings or coconut!)

    I have made these several times. I use dark chocolate chips, fat free evaporated milk and a variety of alcohol depending on the holiday I am making them for. Thanks for the recipe. Everything in moderation! - 4/18/11
