This is a quick breakfast I make with left over baked red potatoes. This is a quick breakfast I make with left over baked red potatoes.
Number of Servings: 1


    Red potato 1 small
    Onions 1/4 cup chopped
    Bell pepper 1/2 cup chopped
    Portabella Mushrooms 100 grams
    Salsa 1/2 cup
    Cotija (Parmesan cheese ) .75 oz
    Butter, unsalted 1 pat.


Chop onions and bell pepper. Place in a non stick pan with butter over medium heat. Cook until onions are translucent. Add potato and mushrooms, cook until warm. If they start to stick you can add a little water. When don crumble Cotija over top and add salsa.
I add a pouched egg and a peace of toast for a great breakfast .
