Ingredients

    1 tbsp xtra virgin olive oil
    1 tsp onion
    1 tsp celery
    1 tsp green pepper
    1/2 tsp garlic
    1 can black beans
    1 packet ready made brown rice
    Mrs. Dash (chipotle) to taste

Directions

In sauce pan, heat oil on medium heat. Add in seasonings and sautee until all excess liquid is evaporated and the veggies are soft. Drain beans and rinse off. Add into pan with Mrs.Dash, lower heat to medium low to low and cover. Stir often to keep from sticking. When flavors have melded (~10 minutes), add in packet of brown rice (equals 2 cups cooked). Stir gently and add a bit of water if too dry. Cook for 5 minutes more, stirring often. Serve with low-fat sour cream (3tbsp per serving) and shredded sharp cheddar (2 tbsp) if desired. Serves 2 (1.5 cup).
