Introduction

Ingredients

1 cup bulgur wheat
2 cups of vegetable broth
1/2 tsp. garlic powder
1/2 tsp onion powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp cayenne
1/2 tsp black pepper
Salt to taste
1 lb. package of tri-color coleslaw mix
1 bunch of green onions, sliced
1 15 oz can of black beans, drained
1 15 oz can of chick peas, drained
1 small can of green chilies, drained
1/4 cup olive oil
1/4 cup balsamic vinegar (more or less to taste)
Directions
Combine the bulgur, broth, and spices in a saucepan over high heat and bring just to a boil. Cover and remove from heat. Let it sit until all of the liquid is absorbed (about 40-50 minutes). Remove the lid and let it completely cool.
Meanwhile, combine the drained beans, the cole slaw mix, onions, chilies, cilantro and parsley in a large bowl. When the bulgur has cooled, add it to the coleslaw and beans mixture. Toss with the olive oil and balsamic vinegar. Serve chilled.
This makes a really big salad. About 20 servings 1/2 cup to 3/4 cup each.
