    1 can kidney beans, rinsed
    1 can white beans, rinsed
    1/2 large onion, chopped
    3-4 stalks celery, chopped
    1 big zucchini, quartered and chopped
    1 c. shredded carrots
    1 c. green beans
    1 14.5 oz. can Italian tomatoes
    1 bag baby spinach
    2 cloves garlic, minced
    1T olive oil
    3-4 cans vegetable stock
    1 c. macaroni


Heat olive oil in a large soup pot. Cook onion, celery and garlic for a few minutes to release flavors. Add the rest of the ingredients, except the pasta. Cook until beans soak up some of the water and spinach wilts. Then add the pasta. Cook until pasta is done and serve.

Note: Pasta can be cooked separately and drained before adding to avoid making the soup starchy.
